Assistant Chef - Upscale Italian Restaurant Chain
Silicon Valley, CA
$80,000 to $85,000 + Health Insurance + Life Insurance + 401k
Job Summary:
Supervise and coordinate the activities of all kitchen staff in conjunction with the Chef. Serves as the BOH leader in the absence of the Chef. The Assistant Chef is trained and able to assume the Chef position.
- Some experience with Italian cuisine and minimum two years related fine dining food, beverage, and service experience in a $4+ million full-service upscale restaurant.
- Knowledge of and ability to use inventory systems, controls and analysis.
- Knowledge of and ability to control labor cost, systems and analysis.
- Knowledge of Microsoft Office (Word, Excel, Outlook)
- Fluent use of the written and verbal English language.
- Strong initiative, ability to work on your own and direct others.
- Bi-lingual English/Spanish a plus.
Overview of Duties:
- Performs daily shift responsibilities while supervising all back-of-the-house staff ensuring 100% guest satisfaction.
Monitor breaks and staffing
Checklists (food quality, temperature)
Pre-shift meeting
Monitor 5-Star Standards
Supervises food preparation, production and service in all areas of the kitchen and line.
Records delivery of merchandise and properly files invoices.
Cooks and prepares food items alongside employees to ensure proper procedures. Assists during a rush.
Conducts interviews, makes hire recommendations, completes new hire paperwork, trains, disciplines and makes termination recommendations for back-of-the-house employees.
Conducts performance reviews for back-of-the-house employees.
Supervises the cleanliness and sanitation of the kitchen, storage and surrounding areas.
Enforces compliance of all safety & security procedures.
Completes documentation related to food safety, facility safety and security procedures.
Coordinates with management necessary repairs and maintenance.
Coordinates with Chef on monthly food inventory, work schedules and administrative duties.
Identifies possible problems and responds to them in a professional and constructive manner
Follows up on opening and closing staff sidework.
Upholds 5-Star Service standards.
Completes supervisory responsibilities in accordance with company policies and procedures, and all applicable laws.
Maintains a professional and acceptable appearance at all times.
Upholds a positive attitude that enforces a good working environment.
Works as a team player; has a pleasant and helpful attitude toward guests and staff members to ensure guest satisfaction.
