Chef Manager at Aramark

Job Description

The Chef Manager has a Monday - Friday Schedule unless otherwise directed by the Food Service Director with an approximate schedule of 6am-3pm with Holidays OFF, Responsible for a district wide kitchen staff of approximately 40 associates. Manage 4 self-production kitchens and 3 satellite kitchens sites. Train and manage kitchen personnel and supervise/coordinate all related culinary activities. Reinforce quality assurance standards. Front of the house Chef Demonstration Cooking & Preparation to an audience of students, parents, and school officials for catering and marketing events, Demand based ordering/inventory, uphold child nutrition standards when composing menus and training staff. Manage food cost under the direction of the food service director, record waste, manage and collect production records. Select and develop recipes as well as standardize production recipes to ensure consistent quality. Establish presentation technique and quality standards, and plan and price menus. Ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen. Take charge of Health Department and Steri-Tech Audits. Be a leader of a safety culture within our kitchens that reinforces PPE usage. Oversee special catering events and may also offer culinary instruction and/or demonstrate culinary techniques. Capability of setting up a buffet or experience in doing so in order to direct staff. Conduct HR functions of management under the direction of the Food Service Director, Computer Proficiency including E-mail, Google, and Excel. Reporting to the General Manager, you?ll take a hands-on approach in focusing on team development, culinary expertise, safety protocol, and client relations. Our Chef Manager will also play a key role in helping us meet budget requirements and execute company-delivered programs.

Job Responsibilities

• Train and manage kitchen personnel and supervise/coordinate all related culinary activities 

• Estimate food consumption and requisition or purchase food 

• Select and develop recipes as well as standardize production recipes to ensure consistent quality 

• Establish presentation technique and quality standards, and plan and price menus 

• Ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen 

• Oversee special catering events and may also offer culinary instruction and/or demonstrates culinary techniques

Qualifications

• Requires 2-3 years of experience in a related position  

• Requires 2-3 years of post-high school education or equivalent experience 

• Culinary degree preferred 

• Requires advanced knowledge of the principles and practices within the food profession 

• Requires experiential knowledge of management of people and/or problems 

• Requires oral, reading and written communication skills
