About the Job
The cook position at Cedar Village Assisted Living monitors resident diets and ADA requirements and provides nutritionally balanced meals that are served with a pleasing appearance on a daily basis.
Requirements: Must be 18 years of age, must have a valid driver's license, obtained a high school diploma or GED equivalent
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Maintain inventory of all food products and paper products in order to provide accurate and current listing of food/items to be reordered from food distributors
- Monitor and observe incoming freight for damaged products such as dented cans, frozen food not at proper temperature, opened packages
- Monitor and record thermometer calibrations according to guidelines
- Monitor and record required temperatures of refrigerators, freezers, dishwasher water
- Monitor all equipment for proper functioning and report malfunctions to Manager/Administrator and/or Maintenance personnel immediately
- Monitor and maintain record of kitchen cleaning audit
- Monitor and maintain proper uniform/attire of all kitchen personnel
- Monitor in coordination with contract dietician all resident’s diet orders ensuring that these diet orders are reviewed with staff and followed through
- Monitor and maintain in coordination with contract dietician approved menu substitutions
- Monitor and maintain in coordination with contract dietician therapeutic diets as ordered by physician
- Monitor and maintain in coordination with contract dietician extension amounts of each therapeutic diet
- Monitor and maintain in coordination with contract dietician appropriate recipes to ensure proper procedure is followed for menus
- Monitor and maintain proper storage of all food items in food pantry, freezer and refrigerator including first in first out policy, properly labeled and properly dated
- Monitor and maintain all equipment is properly cleaned, stored and covered
- Monitor and maintain all kitchen area/dry storage area be free of any rodents
- Monitor and maintain all dry goods are kept in original package or put into marked and dated sealed container
- Monitor and maintain appropriate concentration of sanitizing solution in water bucket and ensure all cleaning rags are stored inside the sanitizing water bucket when not in use
- Monitor, maintain and record appropriate food temperatures
- Complete with passing score Serve Safe course as requested by Manager/Administrator
- Monitor and ensure all cleaning supplies are properly labeled and stored in appropriate place in kitchen area
