Position Description
Line/Sales Crew members are responsible for working across sales, line, fries, server and Quality Assurance positions. They may also complete prep work in the kitchen as required. Their primary responsibilities are ensuring the best guest experience at all times, in terms of guest connection, speed of service, food quality and presentation. They are also responsible for following all food safety and WH&S policies and procedures at all times.
Qualifications & Experience
- Completed (or willingness to undertake) Food Safety course
- Completed (or willingness to undertake) Basset course
- Experience in a guest service role or food preparation role (highly desirable)
Excellent interpersonal and communication skills
- Fluent in spoken and written English
- Personable and approachable disposition
Financial acumen and numeracy
- Ability to accurately perform simple mathematical tasks required for cash handling
Food safety
- Possess a basic understanding of food safety and food quality concepts
Technology skills
- Ability and willingness to learn and use point of sale (Micros and EFTPOS), loyalty systems and order management (KDS)
Guest Experience
- Maintain an enthusiastic and energetic approach to enhancing GYG’s guest experience, ensuring guests come first at all times.
- Maintain a complete knowledge of menu items and processes, basic ingredients and food procedures to provide information to guests and other crew as required.
- Promptly and accurately recall all menu items and prices, understanding of dietary requirements and conditions.
- Acknowledge, greet and engage with guests to assist them in embracing aspects of GYG’s Latin customer experience including greetings, farewell and appreciation.
- Answer and respond to phone calls politely and promptly including taking orders, responding to enquiries and addressing complaints.
- Facilitate the ordering, loyalty (GOMEX) and guest experience processes including providing recommendations of menu items and explaining loyalty systems.
- Accurate daily cash handling including complete and accurate input of customer cash and EFTPOS transactions, banking, maintaining change, till drawer counting, variance investigation and resolution, daily EFTPOS and POS settlements.
- Interact and communicate with dine-in guests through table touches and requests for feedback.
- Maintain a clean, organized and safe restaurant including but not limited to clearing and wiping tables, organizing furniture, refreshing rubbish bins, cleaning spills and ensuring toilets are clean, well-organized and stocked.
- Communicate clearly and effectively with the Restaurant Management and crew to maintain adequate food levels on the line.
- Appropriately handle all customer compliments and complaints.
- Efficient management of the salsa station food levels to ensure fresh product available at all times
Line
- Perform procedural tasks to assemble menu items in accordance with GYG Recipe Guide and procedures including correct portioning, burrito rolling, ‘tossing the food’ and menu item presentation.
- Monitor product levels throughout the shift and communicate effectively with other Cooks to ensure product levels on the line are maintained.
- Maintain a clear understanding of pre-shift, peak hours, shift change, non-peak hours and pre-close procedures for line, and effectively execute these procedures on shift.
- Operate line and kitchen equipment including presses, fryer and salamander.
- Assist with the development of crew in line skills through leading by example and skill sharing.
Fries
- Ensure that fries are stored in the freezer immediately on arrival to the restaurant and placed in the fryer directly from the freezer to avoid thawing.
- Follow all procedures to cook and season fries correctly.
- Ensure that holding times are followed at all times to maintain fries’ quality.
- Follow batch cooking procedures in busy periods to ensure adequate fries are available at all times.
Prep
- Complete the daily preparation of ingredients and menu items as outlined in the Prep Lists.
- Label all products correctly with time and date, and rotate products to ensure FIFO at all times.
Quality Assurance/Server
- Organize all food as it arrives to ensure orders are provided to the guest together where possible while maintaining peak quality, including line items, sides, sauces, etc.
- Liaise with the line and fries to ensure that products are provided to the guest in a timely manner.
- Complete a final check on all food prior to presenting to the customer to ensure it fulfils all required quality and presentation standards.
- Present the products to the guest ensuring all packaging is closed and stickers are placed correctly.
- Clearly call order numbers and ensure that the right orders are allocated to the right guests.
- Suggest the use of the salsa station to all guests.
- Ensure that orders are promptly removed from the KDS once they have been provided to the guest; never removes orders prior to giving them to the guest.
- Follow up with delivery company on delivery orders as required.
Food Safety and WH&S
- Comply with all food safety requirements as outlined in GYG’s procedural and training documents.
- Complete Food Safety Checklists daily, including daily calibration of the thermometer.
- Have a thorough understanding of key temperatures of equipment and product, and investigate and report any concerns to the manager on duty.
- Ensure all products are labelled as required, rotated correctly and promptly discarded when out of date.
- Complete all daily, weekly, and monthly cleaning tasks, ensuring that the restaurant cleanliness and sanitization is maintained to require standards.
- Use and maintain all equipment in accordance with GYG requirements and manufacturers guidelines.
- Report any workplace hazards, including unsafe work practices and emergency procedures.
- Report all injuries and incidents to management as they occur and in accordance with GYG requirements.
