Objective
Manage the overall functions of the dietary department to ensure the provision of quality food service and nutritional care.
Food Preparation/Production Responsibilities
- Assists with food ordering, storage and preparation as designated by the food service director
- Makes and records menu changes under the direction of the food service director
- Ensures that safe food handling techniques are used
- Maintains standards for food preparation and quality of food service; uses nutritionally equivalent substitutes when required
- Assures that dietary staff follows standardized recipes
- Develops work schedules to ensure adequate staff to cover each shift.
- Initiates and monitors the use of The Company menus; Refers to the registered dietitian menus that need to be written for non-standard diets; Adjusts menus for resident/regional preferences and refers to registered dietitian for approval; Develops and maintains a system for dietary staff, residents and other staff to know daily menus; Reviews the use of nutritionally equivalent substitutes and refers to registered dietitian for approval when required.
- Directs the ordering, delivery, storage, including labeling, and appropriate utilization of food supplies.
- Trains staff on proper use of dietary equipment and oversees maintenance of dietary equipment.
- Complete the assigned MDS section according to required timeline.

Qualifications
- Certification in food safety as required by state regulations. Graduate of dietary manager training program approved by the Dietary Manager’s Association and/or State Health Department preferred
- Two to three years of supervisory experience in hospital or long-term care facility dietary department desirable.
