Job Description
Summary/objective
The Dining Room Captain is responsible for supervising the dining room functions for the Club or assisting during the function. They will also assist management in supervising service personnel to ensure that member and guest satisfaction, as well as presentation standards are consistently attained.

- Under general supervision, coordinates and supervises dining room events based on specifications and instruction in the Banquet Event Order.
- Works with Senior Food and Beverage Manager, Food and Beverage Manager, and Assistant Food and Beverage Manager, and others to coordinate personnel requirements for private functions.
- Supervises and directs dining room staff during all phases of service.
- Effectively and regularly communicates expectations and service goals to staff.
- Assists in the development and execution of short and long-term department goals.
- Coordinates food service between kitchen and dining room service staff.
- Inspects all linens daily for proper appearance.
- Assists with inventory of all dining room service ware, equipment, and supplies to meet required needs.
- Enforces established Club rules, regulations, and policies.
- Prepares and reviews table diagrams, guest tables, and set-up needs for service.
- Participates in, or conducts pre-function meeting with servers to ensure smooth, efficient service; assigns server stations and coordinates the timing of courses.
- Ensures that all dining room staff are well-groomed and in proper uniform.
- Assists with training, supervising, scheduling, and evaluating of dining room service staff.
- Assures the neatness, cleanliness, and safety of all dining room areas.
- Interacts with host or hostess to assure all needs are being met.
- May serve "VIP" guests.
- Assures that state and local laws and the Club's policies and procedures for the service of alcoholic beverages are consistently followed.
- Analyzes situations requiring solutions and adopts an effective plan of action.
- Notifies management of member and guest complaints.
- Oversees breakdown of dining room, including clean-up activities and securing the facilities.
- Completes an after-service report to improve quality and efficiency of dining room functions.
- Attends Food and Beverage Department meetings and confers with management to identify, plan, and develop methods and procedures to obtain greater efficiency.
- Completes other appropriate assignments made by Food and Beverage Management.
Competencies
- Knowledge of the principles, procedures, and equipment used in dining rooms.
- Proper storage and care of equipment preparation.
- Proper table set up and dining service execution along with directing team members.
- Able to work a flexible schedule that includes weekends, holidays, and split shifts.
- Must have good communications skills and a dynamic, outgoing personality.
- Good organizational and the ability to follow through.
- Ability to demonstrate proper banquet wine service.
- Knowledge of kitchen and dining room equipment.
- Knowledge of and ability to perform required role during emergency situations.

- Work in a hot, humid, and noisy environment.
Physical demands
- Ability to be on your feet for long periods, lift, move, and/or carry up to 10 pounds regularly and up to 50 pounds.
- Ability to carry out various functions that may require pushing, pulling, kneeling, and reaching.
- Continuous repetitive motions.
Required education and experience
- High school diploma or equivalent required.
- Previous fine dining and banquet experience.
- Must be at least 18 years of age to serve alcohol.
- Minimum two years of dining room server experience.
- Proven track record in successfully assisting all types of dining functions and other special events.
- Some liquor and public entertainment knowledge.
Preferred education and experience
- Prior experience in the Club industry or similar field.
