DESCRIPTION
The Grill/Line Cook is responsible for being knowledgeable, confident, and skillful in preparing food items served in the restaurant. The Grill/Line cook is critical to Black Rock Bar & Grill; the cook ensures that the guests are being delighted by the food items being served. The expectation of the line cook is to engage in an energetic, enthusiastic, and culinary skillful environment. The grill/line cook is to exhibit a high level of interaction with other team members and cooks. Grill/Line cooks are expected to be clean, efficient, and organized at all times including set-up and breakdown of the kitchen.
Skills/Qualifications:
- Strong verbal communication and listening skills.
- Minimum of two years experience with knife skills
- Basic mathematical skills including: addition, subtraction, and multiplication. Also, knowledge of measurements of volume and weight.
- Self-starter who is energetic and flexible.
- Maintains a calm, tactful demeanor when dealing with difficult situations
- Prioritizes responsibilities and achieves results through multi-tasking
- Forms strong working relationships within team.
- Identifies additional tasks to be completed and willingly assists others.
- Follows direction with focused attention.
- Able to read and follow written instructions and recipes.
- Must be able to stand and exert fast-paced mobility for periods of up to 4 hours in length.
- Fundamental comprehension of operating professional kitchen equipment.
Responsibilites:
RESPONSIBILITIES:
- Set up stations according to specs, par levels, and time goals.
- Exhibit proficiency in kitchen prep and knife skills.
- Prepare food according to sanitary guidelines and high standards set in place.
- Execute all menu items to spec.
- Maintain a clean and sanitary environment in the workplace.
- Set up and break down stations and equipment in the kitchen.
- Perform FIFO procedures in storing food items.
- Label and Date all food items.

- Food is prepared in a consistent and thorough manner to ensure guests’ repeat business and trust. The line cook must follow allergen procedures for the safety of the guest.

- Promotes excellence, cooperation, and teamwork within the company.
- Supports and assists team members. Is expected to assist any kitchen position to execute volume efficiently.
-- OPERATIONS
- Sets up, maintains, and operates multiple stations using prep sheets.
- Adheres to standardized recipes, portion sizes, quality standards, and department rules and procedures.
- Maintains quality and freshness of all food items.
- Keep station neat and clean by using the “clean as you go” method.
- Practices safe food handling and cleanliness standards at all times.
- Sweeps, wet mops, and/or brushes floors, as needed or directed by manager. Posts ‘wet floor’
- sign to mopped floors.
- Exhibits a sense of urgency in responding to orders and guests' requests.
- Unloads trucks, pallets, and cases of food and beverage and puts themin assigned locations. FIFO
It all started on October 27th, 2010, in Hartland, Michigan, a small town in a very tightly-bonded community.
Black Rock Bar & Grill opened its doors and brought with it a dining experience unlike any other. By pairing family recipes, a 755-degree volcanic stone, and a love for food, the Morganroth family knew they were a perfect fit for the restaurant industry; however, they had no prior restaurant experience, working only off their dream of what Black Rock could become.
With a very determined family and help from the community, Black Rock grew into something remarkable. Voted the number one steakhouse in Michigan for three consecutive years, the family in 2013 entered a nationwide competition to be named “America’s Next Top Restaurant Franchise” and won first place. Today, Black Rock is expanding across the nation. We are home grown, and soon to be nationally known.
