This position is responsible for preparing food that meets or exceeds hospitality and service standards of the community; preparing all foods to meet quantity and deadline requirements.
General Day to Day Responsibilities Will Include…
- Leads culinary department by communicating expectations of cleanliness, training of food preparation, and organizing kitchen to meet goals of department and building.
- Hires or assists with hiring of kitchen team members and orientates and trains new kitchen employees.
- Makes decision in the absence of Culinary Director, provides direction to all culinary team members and communicates concerns to the Culinary Services Director.
- Prepares specials and events to enhance resident dining experience and overseas daily production of community events.
- Prepares food items using recipes in a timely manner.
- Assists with setting department goals and participates in constant quality improvements.
- Determines food and supplies needed, food order/inventory and coordinates meal production with serving hours.
- Maintains food safety equipment records, food safety temperature records and assists with proper documentation of temperature logs and cleaning schedules.
- Monitors all food items to see that at least the minimum guidelines for temperature, taste, and quality are upheld at-all-times.
- Ensures the proper preparation, portioning, and serving of foods as indicated on the menu cycle and recipes; tastes and prepares food to determine quality.
- Maintains or exceeds standards of appearance, cleanliness, hygiene, and health standards.
- Practices all safety and loss prevention procedures, oversees food storage; checks labels and dates.
- Completes cleaning duties.
- Follows all local, state, and federal policies regarding food handling.
- Manages daily line setup, organization and monitoring.
- Interacts with residents during meal times to monitor resident satisfaction.
- Performs other related duties as assigned by management.
- One (1) year job related experience including food preparation, full-line menu items and therapeutic diets.
- Culinary apprenticeship or training preferred.
- Ability to communicate effectively speaking the primary language of the residents.
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
- Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form; ability to deal with problems involving several concrete variables in standardized situations.
- Must demonstrate an interest in working with a senior population.
- Interacts with guests, residents and staff in a courteous and friendly manner.
- Ability to respond promptly to resident needs.
- Balances team and individual responsibilities.
- Ability to work flexible hours as needed.
- Ability to handle multiple priorities.
- Must demonstrate good judgment, problem solving and decision-making skills.
- Competent in organizational, time management skills.
