JOB DESCRIPTION
DESCRIPTION OF DUTIES:
The Lead Grill Cook is responsible for assisting in the supervision of the Fore Star Grill at Pheasant Run Golf Club. Responsibilities include supervising staff, scheduling, ordering, and inventory control. Responsible for preparing and/or directing the preparation of food to be served, complying with all applicable sanitation, health, and personal hygiene standards, and following established food production programs and procedures. Ensure appropriate use of facility supplies and equipment to minimize loss, waste, and fraud.
EXAMPLES OF WORK: (Note: These examples are intended merely as illustrations of the various types of work performed.)
- Ensures that all food is prepared according to the recipe and served at the proper temperature, presentation, and all other specifications and standards as determined by management.
- Maintains facility and all equipment to ensure cleanliness and food safety/quality.
- Verifies inventory of all beverage cart products before, during and at the conclusion of shifts.
- Maintains Health Department and Township standards at all times.
- Conducts quality line checks at regularly scheduled intervals.
- Organizes, trains and manages to ensure that proper food handling, alcohol serving, and cleaning procedures are utilized.
- Reviews the freshness of food (proper expiration dates) and follows proper food storage procedures.
- Handles guest complaints with a sense of calmness, urgency, poise, professionalism and good judgment.
- Establishes excellent guest service and satisfaction as a priority through personal example and follow-through.
- Trains, assists, supervises and schedules all F&B staff; maintains appropriate staffing levels for each shift.
- Responsible for all aspects of inventory management and control.
- Operates large-volume cooking equipment such as grills, deep fryers, or griddles.
- Assists wait staff with server duties and customer service as required.
- Washes, cuts and prepares foods designated for cooking.
- Cleans, stocks and restocks workstations and display cases.
- Orders and takes delivery of food and non-food supplies.
- Coordinates kitchen operations and food preparation with golf personnel to ensure customer expectations and timelines are met.
- Ensures proper kitchen closing procedures are followed.
- Responsible for adherence to all regulations, laws and procedures related to alcohol handling and service.
- Picks up supplies as needed.
- Manages and facilitates special events.
- Coordinates with pro shop/cart staff on a daily basis and during events.
- Promotes a team atmosphere.
- Performs other duties as required.
ESSENTIAL JOB FUNCTIONS - KNOWLEDGE, SKILLS, AND ABILITIES:
- A minimum of 2 years of cooking and food preparation experience is required.
- ServSafe Food & Alcohol Safety certification preferred; must be able to obtain certification within 30 days of employment.
- Minimum age of 18 years old.
- Ability to handle money accurately, conscientiously and honestly.
- Ability to follow directives accurately and thoroughly and work without close supervision.
- Skill in organizing self and others; ability to self-start in discharging responsibilities.
- Ability to clearly communicate procedures, problems, and policies with fellow employees and the public in a tactful and courteous manner.
- Required to work a wide variety of shifts: afternoons, evenings, weekends and holidays.
- Must possess a current, valid Michigan Driver's License with a driving history that does not create liability concerns, which includes, but is not limited to, convictions for reckless driving, careless driving, suspended license, or convictions involving drinking and impaired driving.
- This is an "At-Will" position. Work assignments and hours are scheduled based on availability, division requirements, and within the confines of the budget. Schedules and work hours are not guaranteed and are subject to change at any time due to division needs, budgeting constraints and staff availability.
