As a Sous Chef at Brookmere Hotel, you will work alongside our Executive Chef to create unforgettable dining experiences, developing innovative and cost-effective menu items, training staff, and ensuring smooth culinary operations. This role requires creativity, leadership, and a deep understanding of kitchen management, including inventory control, staff training, and budget monitoring.
Key Responsibilities:
- Collaborate with the Chef to design creative, market-driven menus.
- Lead and train kitchen staff on recipes and proper execution.
- Maintain food quality through effective rotation, inventory management, and portion control.
- Assist with food ordering, stock management, and budgeting.
- Ensure a clean, safe, and efficient kitchen by maintaining equipment and adhering to safety protocols.
- Monitor staff performance, administer discipline when necessary, and promote a positive team environment.
- Work across various culinary stations, ensuring consistency in food preparation and service.
- Support the development and execution of special culinary events, including holidays.
- Engage with guests warmly and professionally using the S.E.A.C. method—Smile, Eye Contact, Acknowledge, and Close.
