Position Title: Lead Cook-Assistant Kitchen Manager
Reports to: Executive Chef or Kitchen Manager
Position Summary:
- Supervises and coordinates all activities of the kitchen operation and personnel.
- Responsible to produce all food products, maintaining the prescribed standards for quality, cost, and procedure.
- Capable of filling purchase orders to proper inventory levels.
- Perform daily menu cost-outs as well as helping create daily specials.
- Assist in weekly and daily inventories, entering them into the Upserve tablet. Maintaining zoning of products and some counting of products. Trained to take the end of period inventory
- Informs management of any changes or shortages of product.
- Supervises all kitchen personal, including assisting in training, interviewing, counseling, and maintaining proper daily labor, and avoiding staff overtime.
- Must have the ability to supervise and perform every position duty, as necessary.
- Able to make judgment calls on quality of food ensuring only the highest of standards are maintained.
- and supports a safe work environment free from any kind of harassment.
- the line during peak business ensuring all food put up for service is hot, timely, monitors ticket time, and properly prepared.
- Must be able to assess and solve most department and employee situations.
- cleanliness of kitchen, walk-ins, and reach-ins, and cleaning checklist are followed upon. Daily items are soaked in dish station, and delegate additional clean-up, as necessary.
- Cutting of meats and fish for service as needed as well as making sure portion and procedures are correct for service.
- Food safety is being followed. All products is being labeled and used in the appropriate amount of time.
- To step in and cover the Kitchen managers vacations/days off
ALL employees are expected to abide by all company policies and procedures at all times. Managers (exempt employees) must abide by and enforce company policy and procedures at all times.
