The role…
At Soho House, the Beverage Controller is responsible for purchasing, storage and inventory of all beverages related products for Soho House & Co property. This includes: all beverage and glassware. As the Beverage Controller, you will coordinate with each departmental manager to ensure products are ordered and stored efficiently and by state / national food and safety standards.
A successful Beverage Controller will also oversee a team of Receivers who assist with the daily stock counts and organization of storage areas. We hope you have excellent organization skills, have a knack for numbers, and can keep track of many moving parts!
Main Duties
- Able to effectively control the Beverage Cost.
- Control the Beverage outlets in terms of wastage, pilferage, and efficiency.
- Prepare variance analysis beverage and communicating with Department Heads.
- Check and verify voids in the POS systems.
- Check and verify discounts on the POS systems.
- Check and verify all complimentary sales in POS systems.
- Check the menu pricing on the POS systems and ensure the correct prices are loaded for all items.
- Responsible for surprise spot checks at all F&B outlets
- Spot check on the receiving department to ensure that the goods received are checked for quality.
- Check and ensure all menu items have a recipe.
- Responsible for developing pars, ordering systems and processes that promote effective management of inventory and create opportunities that optimize the sale of products with longer shelf life
- Develop and retain relationships with external vendors and internal leadership team to deliver perishable and non-perishable products on time, budget and without sacrificing quality
- Provide monthly PMIX reports and recommend menu adjustments for all Food and Beverage Items & Group Event Menus
- Ensure weekly Beverage Costs are within the allocated Budget. If costs are above allocated budget provide reasoning and solutions to reach that goal.
- Works closely with the F&B Operations Managers to purchase the highest quality product while constantly searching for the lowest price.
- Negotiate Beverage prices, place daily food and beverage orders based on requirements, and ensure prompt delivery as requested within the prescribed receiving hours.
- Place weekly liquor, beer and wine orders as required.
- Assist Culinary team with ordering and cost control.
- Gain complete knowledge of Adaco, train and ensure Management team is using the Adaco as per company directives in all departments.
- Create and run bi-monthly (or as needed) training sessions for all departments centered around storage of product and tracking process to ensure inventory is moving to market
- Collaborate with department heads to create, publish and update par levels for each department regarding all Beverage products.
- In conjunction with the GM, F&B Managers and Bar Manager, ensure recipe accuracy, implement budgets, and cost management systems that can increase efficiency and sales.
- Maintain accurate pars for products by participating in weekly reviews and resolution of major liquor variances
- Partner with the F&B Managers keep the Beverage Program in-line with budgets by controlling purchasing and security of all beverage products.
- Proper bookkeeping and reconciliation of invoices to be inputted into internal reporting system
- Deliver inventory reports on a daily/weekly basis
- Manage Receivers and ensure their work is productive and that storage areas are kept clean and organized
- Performs other duties as assigned by supervisor/manager
Required Skills/Qualifications
- 2+ years' experience managing inventory for perishable and non-perishable items in a demanding, high-volume and fast-paced environment
- Inventory Management System Experience, Excel and all Microsoft Office
- Vendor management and proven experience with managing budgets, invoices and forecasting purchasing needs
- Strong communication and people skills.
- Flexible schedule to work nights and weekends as needed
- Ability to multitask, deliver results and reports
Physical Requirements
- Must be able to seize, grasp, turn and hold objects with hands.
- Must be able to work on your feet for at least 8 hours.
- Fast paced movements are required to go from one part of the club to others.
- Must be able to move, pull, carry, or lift at least 20 pounds.
- Occasionally kneel, bend, crouch and climb as required.
