Qualifications and Requirements
- Formal training or culinary education is a huge plus
- Minimum 1 year experience baking in a commercial kitchen or bakery
- Basic mathematics for scaling recipes and adjusting ingredients
- Ability to use and operate tools and equipment including mixer, oven, proofer, sheeter, scale, thermometer, hand tools
- Knowledge of key ingredients and their functions pertaining to baking
- Must be able to lift up to 50 lbs
- Effective time management and organization skills i.e. working on multiple recipes at all at different steps
- Basic knowledge of computers, email, Point of Sale system
- Ability to follow directions and procedures
- Ability to communicate clearly with fellow staff and customers about our products and orders
- Capable of standing for long periods of time
- Interest in developing and perfecting new recipes is a plus
Responsibilities
- Baking all bread, biscuits, sweet rolls, and other yeast based products
- Monitors product quality for freshness and ensures proper product rotation
- Preparing various doughs for daytime use i.e. cookies, king cakes, muffins, etc.
- Completes production and spoilage records, adjusting production records to maintain sufficient inventory
- Maintains a clean and sanitary environment at all times in accordance with health department standards
- Immediately reports safety hazards and violations
- Performs other tasks as assigned by managerial staff, including cleaning, packaging, etc

- Full time and part time positions available
- Night Shift: Monday-Sunday 7pm - 2am (Flexible)
- $15-20/hr based on past experience and skill level
- Must be able to work some minor holidays
Pollman’s Bake Shop all began 100+ years ago back in 1918 with Fred J. Pollman. He initially moved from New Orleans to Mobile to help at his brother-in-law’s bakery and later opened his own business, which continually ran until the Great Depression. In 1937, he and his wife, Corinne, started over small and by 1950, his children – Fred J. Pollman Jr., Charles Pollman and Mary Pollman Bender – had acquired the business. The second generation added two more bake shops under the Pollman name. The business stayed in the family until 1981 when it was purchased under new ownership. Then again in 1989, Fred J. Pollman III and his wife, Rose, brought it back into the family. Together they operated the three Pollman’s Bake Shops in Alabama’s historic Mobile for 30 years! After a long and dedicated career, they are now retiring to enjoy time together. As of 2023, the business is now under new management. Although it may not be operated by a Pollman family member today, we are absolutely proud of Pollman’s legacy and want to honor the name by restoring the brand that is so loved in the city - Here’s to another 100 years of delicious business!
