Position Summary: Under the direction of the Administrator, the Certified Dietary Manger is an active member of the Nursing Home team that delivers long-term care consistent with the strategic vision, goals, philosophy, and direction of the Nursing Home and CRHS. The Manager provides leadership and guidance to ensure that food quality, safety standards, and resident expectations are satisfactorily met. Maintain records of expenditures, food supplies, inventory levels and equipment. Basic Qualifications: Graduate of Dietary Manager Program, 2-year or 4-year food service program Two years’ experience in food service management - Licensure, Registrations & Certifications:
Requires successful completion of the Certified Dietary Manager exam. Essential Job Responsibilities: - Oversees the Nursing Home’s Foods Services unit, and staff to ensure the preparation and delivery of meals to residents.
- Prepares staff schedules to ensure 24/7/365 resident food services.
- Participates in the recruitment and retention efforts and interviews and selects new food service employees and provides new employees with an orientation specific to the department.
- Assists with budget preparation and planning for supplies, ensures the department operates within the budget and explains variances.
- Maintains and updates the Food Services safety plan and ensures compliance with JCAHO requirements.
- Serves on committees and task force as required.
- Provides staff with the opportunities to participate in staff development and regularly schedules in-service programs.
- Prepares and conducts probationary and annual employee evaluations that accurately reflect the employee’s performance during the evaluation period. Provides the employees with a summary of their strengths, areas for improvement and developmental plan for the future.
- Assure safe receiving, storage, preparation, holding, service, cooking, and transportation using HACCP guidelines.
- Prepare cleaning schedules and maintain equipment to ensure food safety.
- Ensure proper sanitation and safety practices of staff.
- Process new diet orders and diet changes, keep diet cards/information updated.
- Complete the assigned MDS section according to the required timeline.
- Determine resident diet needs and develop appropriate dietary plans in cooperation with RD and in compliance with physicians’ orders.
- Review plan of care related to nutritional status, document concerns that can be resolved, improved addressed to improve resident’s nutritional status and eating function.
- Review, revise, and implement, in cooperation with the IDT, the resident nutrition assessment and plan of care.
- Ensures the continuous survey readiness of any and all regulatory agencies including, the Joint Commission, EEOC and other governmental agencies.
- Performs other duties as assigned.
