As we strive forward with ambitions to gain and retain more accolades, we are seeking a Chef de Partie - Canapes (Dinner) who has a wide variety of experience from high volume to fine dining. We're seeking a passionate culinarian who thrives in a high-paced, team-oriented environment. This person must be driven, detail-oriented, and eager to grow with a company that values creativity and continuous self-development.

A successful Chef de Partie must be very knowledgeable about their specialty, as well as culinary functions in general. A Canapes/Garde Mange must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the Sous Chef and Head Chef.

The work schedule is Wednesday - Sunday (2:00 PM - 10:30 PM or until close). This position is based at our Estate: 11680 Chimney Rock Road, Paso Robles, CA 93446.

• The Chef de Partie Canapes/Garde Mange's primary role is to oversee the preparation, cooking, and presentation of food in their respective section of the dinner kitchen operation/menu
• Will focus on canapes, first course, plating, cheese plates for dinner service
• Supports on prep and execution of any all culinary-related activities as they arise within our out-of-daily job norm
• Prepare, cook and present culinary dishes; enforcing strict health and hygiene standards in the kitchen; and troubleshooting any problems that may arise
• Works with Head Chef and Chef de Cuisine to maintain standards and create new dishes
• Assists the Kitchen and Restaurant teams in preparing and executing any events 
• Supports on prep and execution of Monday, Tuesday, and Wednesday
• Picks garnish as needed from the JUSTIN garden and communicates product needs 

• 2+ years of fine dining culinary experience
• Culinary degree preferred but not required
• Serv-Safe Certified
• Must be able to communicate verbally and in writing in English
• Demonstrated strong ability to work well under pressure
• Ability to establish direction, obtain commitment and execute appropriate logistical processes
• Comfortable in Dealing with Guest and Purveyors on a daily Basis
• Exceptional attention to detail, and be passionate about food and wine
• Must thrive in a fast paced working environment
• Have a calm and approachable demeanor
• Superb time management and organizational skills

Pay Range: $22.00 - $25.00 per hour. Final compensation will be dependent upon skills and experience.
