JOB TITLE: Cook/Chef
CLASSIFICATION: Hourly Staff, Full Time
REPORTS TO: Director of Food Service and Assistant Director of Food Service

SUMMARY:
The Cook/Chef position works within the Food Services Department to ensure that high quality, properly seasoned, nutritious food is being provided in a fiscally responsible, aesthetically presented, and safe manner. Working cooperatively as a valued member of the food services team, this position will assist with any aspect of the food services program necessary. DUTIES AND RESPONSIBILITIES:
- Timely food production such that all food is ready at the time of service.
- Prepare food items according to established recipes and menus in a way that preserves food freshness, quality and appeal.
- Utilize batch cooking techniques to avoid over or under production.
- Always utilize safe food handling techniques.
- Store food items according to established standards of practice utilizing proper labeling and dating.
- Hold prepared food items at appropriate temperatures (below 40° if cold, above 135° if hot).
- Maintain production records (food usage, overages, shortages, customer counts, etc.).
- Maintain established logs (food temperatures, cooling temperatures, cooler & freezer temperatures, etc.).
- Assist with the production menus by giving feedback and ideas as appropriate.
- Assists with catering – cooking and preparing recipes as needed.
- Maintain a clean and sanitized work area.
- If a work shift requires, properly open and/or close the kitchen – unlocking/locking doors & secured areas and turning on/turning off of all equipment essential to the operation.
- Maintain a safe, tidy, and well-organized work environment always; clean up spills quickly, and wear protective gear as needed (i.e.: slicer glove).
- Communicate needs and concerns regarding food production and kitchen operation to supervisor appropriately, and in a timely manner.
- Monitor kitchen equipment for proper functioning; report any discrepancies to supervisor immediately.
- Support other kitchen employees to ensure that the essential functions of the kitchen are performed adequately and appropriately.
- Assist personnel in ordering and developing inventory procedures.
- Removal of refuse as needed.
- Refer and provide information to higher level manager/supervisor regarding issues or concerns.
- Other duties may be assigned.
PHYSICAL DEMANDS/WORK ENVIRONMENT:
- This position involves working in an office environment operating standard office equipment and technology along with physical work in a commercial kitchen environment.
- Able to handle pressure, multi-tasking, and flexible work hours.
- Able to work with appropriate food service software to do data entry.
- Effective communication with all levels of food service staff, faculty, and administration.
- Maintains good public relations with all customers, clients, staff, vendors, and the community.
- Responsibilities include moving inventory, product, carts, tables, etc. as well as using kitchen utensils and commercial kitchen equipment.
- Environment may include hot, humid, or cold temperatures.
- May require extended working hours at times.
- Must be able to lift 25lb.

REQUIRED KNOWLEDGE, SKILLS and ABILITIES:
- ServSafe Certification
- Allergen Handling Certification
- 3 years of cooking experience at college/institutional setting or Associate’s Degree in Culinary Arts.
- Excellent verbal and written communication skills.
- Strong organizational and mathematical skills.
- Knowledge in computer software such as Microsoft Office and Google Documents.
