POSITION OVERVIEW
The full-time Cook will ensure the Kitchen operates according to the real time demands of the Harpoon Brewery Taproom (HBT). The Cook plays a critical role in maintaining a safe, clean, and highly productive work environment, in addition to maintaining the Harpoon culture. The Cook must be able to execute their duties without on-site supervision which requires, amongst other things, shift management of assigned area, self-reliance, problem solving skills, a temperament that can handle stress.
These responsibilities include but are not limited to the following:
- Measure and assemble ingredients for menu items within your designated station
- Assist in the training of all Kitchen staff based on departmental needs
- Collaborate with the team to instruct newly hired staff in the operation of kitchen equipment
- Act as a lead to the Cook staff providing guidance and support where needed
- Provide performance feedback on Kitchen staff to management to be tracked and used for professional development
- Collaborate to prepare meals during dining hours
- Maintain accurate food inventories for your designated areas
- Properly store food items at appropriate temperatures with appropriate labels
- Rotate stock items as per established procedures
- Restock designated prep area for subsequent shifts
- Ensure daily food prep list has been completed and communicate any variances
- Ensure food prep area and kitchen are cleaned and sanitized at the end of your shift
- Maintain professional relationships with all coworkers.
- Follow checklists and standard operating procedures.
- Maintain a safe, clean, organized, and stocked work area.
- Maintain full knowledge of menus, recipes, and other pertinent information.
- Answer questions from staff regarding menu ingredients and allergy concerns for new menu items.
- Responsible for constant sanitation, organization, and proper food handling.
- Prepare work area for opening, mid-shift, or closing in accordance with company standards.
- Attend regularly scheduled department meetings
- Perform other related duties as assigned by the General Manager or manager-on-duty.
REQUIREMENTS/EXPERIENCE/SKILLS:
- Proven cooking experience, including experience as a line chef, restaurant cook or prep cook
- Excellent understanding of various cooking methods, ingredients, equipment and procedures
- Accuracy and speed in executing assigned tasks
- Able to work in a fast-paced, team oriented kitchen environment.
- Must follow strict food safety requirements.
- Complete, sign-off on and manage opening and closing checklists
- Maintain a professional appearance at all times.
- Communicate with management to ensure guest satisfaction.
- Report to work as scheduled, in uniform, and ready to work.

- Be able to work nights, weekends and holidays.
PHYSICAL REQUIREMENTS/WORK ENVIRONMENT
- Standing for Extended Periods: spending 8+ hours on your feet while working in the kitchen.
- Lifting and Carrying: lifting of heavy pots, pans, containers, and kitchen equipment up to 50 pounds.
- Bending and Stooping: to access ingredients, stovetops, ovens, and low shelves.
- Reaching and Stretching: Accessing ingredients and equipment on high shelves or in low storage areas may require reaching and stretching.
- Manual Dexterity: precision with knife skills and the ability to handle small kitchen tools. Good hand-eye coordination and fine motor skills.
- Repetitive Motions: perform repetitive tasks, such as chopping, stirring, and plating.
- Tolerating Variable Temperatures: Kitchens can become very hot due to cooking equipment, stoves, ovens, and open flames.
- Coping with a Fast-Paced Environment: fast-paced, high-stress environment. Ability to work efficiently and stay focused during busy shifts.
- Exposure to Steam and Smoke: steam, smoke, and sometimes grease.
- Sensory Perception: The ability to taste and smell food accurately is crucial for a cook to ensure dishes meet quality standards.
- Noise Tolerance: Ability to concentrate amid the sounds of equipment, sizzling, and communication with colleagues.
