HOURLY RATE: $21/hour and a $1, 500 Sign on Bonus

The duties listed below are not set forth for purposes of limiting the assignment of work. They should not be construed as a complete list of the various duties normally performed by the individuals assigned to the Food Service department or those to be performed temporarily outside an employee’s normal line of work.

• As directed, independently performs moderately difficult tasks in preparing quantities of quickly prepared foods such as steaks, chops, cutlets, hamburgers, eggs, salads and other similar items.
• Works under the supervision of the Cook II.  
• The Cook I will act independently or assist in the performance of any and all duties necessary to keep the facility in full operation.  
• Will perform other duties as assigned.
• Prepares in quantities, by various methods of cooking a variety of foods including soups, sauces, meats, fish, vegetables, baked goods, etc.
• Prepares special foods for detainees requiring special diets.
• Plans cooking schedule so food is ready at prescribed times.
• Ensures delivery of food to pod at prescribed times.
• Provides the measuring, mixing, stirring, cutting, grinding, chopping and seasoning of ingredients according to recipes.
• Tests foods for completion of cooking time and adjust heat controls.
• Monitors the baking, roasting, broiling, frying and steaming of foods as called for in recipes.
• Monitors the carving and dividing of portions into individual servings.
• Assists in the training of detainees.
• Monitors daily operations in food productions for conformance to establish quality, quantity, safety and sanitation requirements.
• Reviews menus to determine type and quantity of food to be prepared.
• Draws required cooking utensils from kitchen storage areas.
• Loads and unloads delivery trucks as necessary.
• Work is completed in a priority established by supervision or facility need. All work will be completed with a high degree of professionalism, quality and craftsmanship.
• Lulls in workload are used to maintain a clean and orderly work area and to ensure clerical tasks are up to date.  Keeps up to date on departmental and facility safety standards and local codes and policies.
• Trains and oversees a crew of detainees assigned to prepare, cook, and serve meals and clean kitchen and dining area, estimates food. Instructs inmates in the preparation of quality meals.
• Coordinates the work of the detainee crew to complete adequate food preparation and serving at the allotted times.
• Observes the work of detainees in the kitchen and instructs inmates in kitchen safety practices and more efficient work method.
• Maintains security, control, and proper issuance of tools and chemicals.
• Assists in providing safety training to staff and detainees workers.
• Routinely conducts searches of all areas of food service for contraband.
• Will perform other duties as assigned.

• A high school diploma or GED is required.
• One year experience in large scale cooking preferred.
• Must be able to obtain a DHS ICE CLEARANCE
• Must be at least 21 years of age. 
• Must be able to pass extensive background investigation and drug testing.
• Random drug testing will be performed.
• Must have inter/intra communication skills with employees and department heads. 
• Must be able to follow Standard Codes of Conduct pertaining to interaction with detainee population.
• May lift or push up to 50 lbs. 
• For extended periods of time may be required to stand, walk, squat, kneel, sit, bend, reach and climb.

Working Conditions:

• Work areas may include all areas of the facility.   
• May be exposed to cleaning chemicals and solvents. 
• Works in close proximity to steam or gas ovens and grills that produce intense heat.
