WE LOVE OUR WORK.:- Performs duties to prepare and cook food, and displays/plates foods as venue requires such as sauces, soups, and other foods of medium and higher complexity.
- Assists in reaching profitability, guest satisfaction, work force strength, and compliance goals.
- Provides instruction and guidance as necessary to Cook IIs and maintains a clean food preparation area.
- This position is responsible for providing a high level of customer service and promoting a positive attitude to create a fun and entertaining experience for our guests and team members.
- Checks and ensures adequate supply of foods and seasonings are available for service.
- Checks that food is properly prepared for cooking and serving.
- Prepares a wide variety of foods items of medium and higher complexity according to directions.
- Correctly works most cooking stations throughout the entire property and has working knowledge of all kitchen equipment.
- Recommends adjusting cycles of menus based on food quantities and guest demand.
- Ensures cleanliness of food preparation areas from start to finish.
- Gives assistance to Cook II's and Utility workers as required, providing instruction and guidance as necessary.
- Organizes cooking and food storage areas.
- Maintains walk-in coolers in accordance with Will County Department of Health Standards.
- Follows safety rules and keeps work area clean and orderly.
- Creates specials for assigned outlets, utilizing both new and dated products.
- Ensures sanitation guidelines are followed as directed by the local health department.
- Ensures all products are correctly and accurately labeled, dated, and stored in accordance with local health department and Company guidelines.
- Opens assigned outlets in a timely fashion as instructed by a Chef.
- Communicates with guests, colleagues, and management in a polite, professional manner and always practices Red Carpet Service training.
- Follows recipes to exact standards; follows recipe formulas, standards, cooking time, directions, and quantities. - Attends scheduled meetings/classes/training as directed.
- Leads by example and mentors fellow team members at all times.
- Reports to Sous Chef at start of shift to receive instruction as to daily specials and menu changes.
- Reports any spoilage or shortage to Sous Chef immediately.
- Directs line staff in absence of Sous Chef.
- Prepares plate menu items, as ordered, per specifications on hot food production line with strict attention to detail, speed, and accuracy.
- Must be able to perform well under pressure, meeting production schedules to ensure orders are fulfilled in a timely manner.
- Assists in other areas of kitchen as instructed by Sous Chef.
- Demonstrates abilities to meet performance expectations with Communications, initiative/Problem Solving, Guest Service/interpersonal Relations, Work Habits and Conduct, and Responsible Gaming/Business Ethics.
- Must be able to grill (steaks and seafood), also be able to tell meat temperatures by touch.
- Able to work a sauté station (pan sear fish, foie gras, poultry, making pan sauces).
- Must be able to perform all knife cuts.
- Sets up mise en place as per posted instructions.
- Assists in daily inventory of coolers and freezers.
- Communicates station needs, waste, and discrepancies with immediate supervisor.
- Other duties as assigned.
- High School Diploma or equivalent is required along with thorough knowledge of cooking techniques.
- 4–5 years of experience in food preparation is preferred.
- Ability to work well as part of a team.
- Must understand and speak the English language.
- Ability to work afternoons/evenings - especially Fridays, Saturdays and Sundays.

Must be able to push and pull carts and equipment weighing up to 250 lbs., occasionally. Some work involves contact with cleaning products and chemicals.
