Essential Functions of Dietary Supervisor:
- Determine quality and quantity of food required plans and prepares master menus. Supervises the planning of menus for therapeutic diets, and controls food costs
- Supervises food production and service programs, as well as departmental staff involved
- Ensure food preparation for optimal nutrition and economic handling of food, as well as efficient usage of time. Maintain and issue a file of standardized recipes adjusted to the proper yield
- Plan menus, purchase food and assign duties for special functions. Adapt master menu cycle to individual Center preference with Consultant Dietician
- Check food for flavor, temperature, and appearance on a regular basis to assure that appetizing meals are presented to Residents
- With Contract Dietician, monitor nutritional status of residents using regular assessments, progress notes and dietary care planning
- Prepare departmental budget on an annual basis
- Make frequent inspection of all work, storage areas to assure proper cleanliness
- Maintains inventory of kitchen tools and food supplies
- Assures all regulatory requirements are met for the preparation, storage and nutritional aspects of residential food program
Qualifications of Dietary Supervisor:
- High school diploma or general equivalency is required
- Within two (2) years of job start, must attain certification as Certified Dietary Manager (CDM) via Association of Nutrition & Foodservice Professionals/Certifying Board for Dietary Managers. In MO, an equivalent certification in food service management may be accepted.
- Current and active certification as CDM is a plus!
- 2-3 years of progressively responsible experience in a commercial kitchen is desired
- Candidates must maintain a working email address and phone number for employer communication.
- Ability to work cooperatively as a member of a team
- Ability to communicate effectively with residents and their family members, and at all levels of the organization
- Ability to react decisively and quickly in emergency situations
- Ability to maintain confidentiality
- Ability to read, write and speak the English Language
- Organization and management skills
