The Dining Lead directs the kitchen team and assists the dining service lead in carrying out the day-to-day operation of the kitchen. The dining supervisor assists the dining service director in for all aspects of ordering, production, cooking and service of the food. These responsibilities include the supervision and scheduling of all cooks, bakers, dishwasher and all other kitchen employees. The dining supervisor takes ownership of the daily items, keeps it rotated, watches the menu splits (what customers orders from the day before) and make decisions to ensure that there is product or another item to replace the menued item. Weekend work expected on a rotation basis.

Duties and Responsibilities:
Department Management:
- Plan, develop, organize, implement, evaluate, and manage the Dining Services Department.
- Develop, revise, and maintain policies, procedures, job descriptions, and staff evaluations for the Dining Services Department.
Coordination:
- Coordinate dining services and activities with other related departments (e.g., Environmental Services, Life Enrichment, Marketing).
- Coordinate dining services for special activities, dinners, and business meetings held at the facility, including residents' personal events.
Staff Support:
- Assist dining services staff in developing and using departmental policies, procedures, equipment, supplies, etc.
- Perform administrative duties such as completing necessary forms, reports, evaluations, payroll, etc.
- Assume administrative authority, responsibility, and accountability for supervising dining services.
Reporting and Budgeting:
- Make written and oral reports/recommendations to the Executive Director concerning the operation of the Dining Services Department.
- Develop an annual operating and capital budget and adhere to budget guidelines for Dining Services.
- Work with the facility's consultants as necessary and implement recommended changes as required.
Inspection and Maintenance:
- Inspect all areas of the department for upkeep and supply control.
- Handle emergency situations, such as rescheduling work assignments, work schedules, fire, and evacuations.
- Participate in all survey inspections and develop a plan of correction for dining services findings noted during survey inspections.
Staff Education and Management:
- Schedule, coordinate, and orient in-service education for staff as required.
- Hire appropriate staff for the department and monitor, counsel, and terminate staff as deemed appropriate, documenting actions related to hiring, counseling, and terminating.
- Orient staff in the proper, safe use of equipment and supplies.
- Develop, implement, and maintain a procedure for reporting hazardous conditions or equipment.
Compliance and Safety:
- Track and ensure all food and equipment temperatures meet regulation standards.
- Monitor proper labeling and dating of food (Serv-Safe).
- Maintain compliance with all sanitation guidelines as outlined by the Illinois Department of Health.
Required Skills and Qualifications:
- Culinary degree or equivalent years of experience.
- At least two years of management experience in a dining environment preferred.
- Manager Food Safety License.
- Ability to work in a fast-paced environment.
- Must enjoy working with the senior population
