Your Role with the Company
The Executive Sous Chef supports the Chef de Cuisine/Executive Chef in all BOH operations. Your responsibilities will include:
- Assist in managing the main kitchen with production and execution, training and mentoring the culinary and FOH staff, as well as managing food and labor costs on a daily basis
- Involved in developing recipes and portion control specifications, menu planning, local preferences and recipe testing with Executive Chef
- Daily inspections of all food prepared; ensure cleanliness and sanitation procedures are followed by the entire BOH team
- Coordinate training activities with the main kitchen, prep cooks and dishwashers
- Maintain all specialized company equipment and ensure cleaning protocols are followed
- Build lasting relationship with all vendors
- Assist Executive Chef with food and beverage related issues, execution issues and problem solving
- Assist in scheduling, training, and performance management of kitchen staff
- Oversee the ordering of supplies and maintain proper inventory control levels
- Experienced leader to anchor and guide the PM service team with confidence and efficiency
Your Qualifications:
- Minimum 2+ years as an Executive Sous Chef for a high volume ($8M+) upscale full-service casual restaurant
- Proven expertise in pasta preparation and production
- Able to prioritize people engagement, teaching, mentorship, and staff growth through guidance and feedback
- Passionate about hospitality and guest service
- Strong communication & interpersonal skills, calm and patient, approachable and kind
