Job Summary
The Executive Chef oversees the back of house restaurant department of the hotel. The Executive Chef is responsible for ensuring labor and quality standards are upheld and assists with establishing a positive work environment, delivering exceptional guest service and administering policies and procedures established by the company and the hotel brand.   
Essential Duties and Responsibilities
- Oversees all day-to-day operational activities of the department  
- Designs the property's menu and determines prices to ensure profitability
- Supervises kitchen staff including interviewing and selecting, hiring and setting pay, assessing performance, investigate complaints, and making formal discipline and termination recommendations
- Maintains personal connections with guests, clients and community organizations to encourage guest loyalty    
- Supervises team members with efforts relating to recruitment, orientation, training, scheduling, performance management, counseling and other team member relations issues  
- Maintains knowledge, skills, and abilities needed to perform any position in the department   
- Assists in preparing the annual department budget   
- Prepares foods according to portion and quality standards established in recipes and procedures 
- Prepares equipment and food based on forecasted needs and events  
- Maintains working knowledge of all kitchen machinery operations 
- Maintains updated knowledge related to current menu options, preparation methods and techniques, and ingredients  
- Maintains inventory controls and dates all incoming products 
- Orders food and beverage related products 
- Assists in monitoring and upholding policies and procedures for safety of guests and team members     
- Assists in maintaining cleanliness throughout the department  
- Assists team members and other departments as needed to contribute to operational efficiency   
- Performs additional responsibilities as assigned by leadership
