Job Summary
Executive Chef - Fast Casual Restaurants & Retail
We are seeking a dynamic and entrepreneurial Executive Chef to oversee kitchen operations for our fast-casual restaurants at George Washington University located in Washington, DC. This will include a Chick-fil-A and a new Panda Express. The ideal candidate will possess branded fast-casual restaurant chef experience and a passion for culinary excellence. In this role, you will ensure a safe and sanitary work environment while adhering to culinary programs and guidelines.
Key Responsibilities:
+ Menu Development: Design regular and modified menus in accordance with established guidelines, ensuring variety and quality.
+ Quality Control: Adhere to standardized recipes, portioning, and presentation standards. Complete daily production worksheets and waste logs, and taste meals to guarantee quality.
+ Staff Training: Train union kitchen staff in food preparation, safe food handling, operation of equipment, and sanitation practices based on company and regulatory standards.
+ Cleaning and Maintenance: Establish and maintain cleaning and maintenance schedules for equipment, storage areas, and workspaces, ensuring compliance by kitchen staff.
+ Inventory Management: Maintain accurate inventory of food and non-food supplies, ensuring adherence to established guidelines while meeting demand.
+ Leftover Utilization: Make informed decisions regarding the utilization of leftover food products in compliance with company policies.
+ Health Compliance: Ensure compliance with federal, state, and local health regulations and sanitation procedures, as proven through audits.
+ Safety Protocols: Follow all safety policies and procedures, including incident reporting and maintaining a culture of safety within the kitchen.
+ Engagement: Actively participate in departmental meetings and staff development programs to foster a collaborative and engaging kitchen environment.
Preferred Qualifications:
+ Bachelor’s Degree in Culinary Arts, Food Service Technology/Management, or a related field; or an Associate’s Degree in Culinary Arts or a culinary certificate with relevant experience.
+ Minimum of 3-5 years of dynamic culinary and kitchen management experience, with a focus on fast-casual dining.
+ Experience in high-volume, complex foodservice operations preferred.
+ Hands-on chef experience is needed.
+ Extensive knowledge of food trends, emphasizing quality, production, sanitation, food cost controls, and presentation.
+ Proficient in Microsoft Office Suite (Word, Excel, PowerPoint), Outlook, and email.
