Lettuce Entertain You Restaurants is looking for a Food Service Sanitation Manager to join the BOH leadership team with 2 years of restaurant or related experience with a focus on food safety and sanitation; ServSafe certification is required. Preferred Experience and Qualifications:
- Bachelor’s in Food Science, Hospitality Management or related field
- Experience working with SNHD regulations
- Management experience
ServSafe certification is required.
Our ideal Food Service Sanitation Manager candidate will have experience working with Southern Nevada Health District (SNHD) regulations, BOH management and/or a Bachelor’s in Food Science, Hospitality Management or a related field. Knowledge of Hazard Analysis and Critical Control Points (HACCP) procedures is a plus.

- Maintain an ongoing expertise of all current Company, NSF, federal, state and local government agency standards; plan and manage food service sanitation and safety policies, programs and procedures to comply with those standards and reduce risk to guests and employees
- Create, maintain and implement food service sanitation and safety policies, procedures and programs; constantly monitor adherence and conduct regular inspections and audits to ensure compliance with all applicable food service sanitation and safety standards, policies, programs and procedures; identify and remedy compliance shortfalls and other potential food service sanitation and safety risks and hazards
- Liaise with SNHD and other government agency and third-party representatives as the Company’s representative at all times; prepare for all audits and inspections and follow up with a plan to address deficiencies and drive continuous improvements
- Develop, maintain and regularly deliver food service sanitation and safety training programs to all restaurant team members
- Drive Company programs that oversee all team members’ compliance with required Company and government training programs and requirements, including but not limited to ServSafe and HACCP training and certification
- Investigate and appropriately document any food service sanitation and safety incidents or breaches, and develop corrective action plans to prevent future occurrences
- Maintain accurate records of inspections, training sessions, and compliance efforts, and report findings to management
- Partner with GM and management team to interview, hire, onboard, train, supervise and develop all BOH employees and teams as needed
- Model and promote teamwork across all teams
- Use tact and good judgment when dealing with challenges pertaining to guests, vendors and employees, and respond with patience and courtesy
- Work a variety of days and shifts (including early mornings, late nights and weekends) at multiple sites with or without overnight travel, as needed
- Move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, occasionally move and/or lift up to 50 pounds
- Ability to create, maintain and implement food service sanitation and safety policies, procedures and programs
- Skilled in managing department spending through effective sourcing, ordering and record-keeping practices
