Position Overview
An experienced cook responsible for managing employees at a Residential Dining Cafeteria. Ensures and oversees work involving the preparation of bread, pastries, meats, vegetables, salads, and other items using recipes and various kitchen equipment. Responsible for ensuring employees prepare high-quality and flavorful food for all our customers daily while providing a fun, friendly atmosphere. This position involves Training Student Workers in all areas of work in the cafeteria,
Minimum Qualifications
High school diploma/GED equivalent and two years' of experience in institutional or commercial food preparation, including one year of supervisory experience; or any equivalent combination of experience, education, or training.
Knowledge, Skills and Abilities
Ability to follow detailed oral and written instructions; ability to direct and manage the work of others. Ability to work from written menus, standard recipes and oral instructions. Ability to maintain records and complete forms accurately. Ability to apply mathematical concepts to complete tasks (example: checking orders for quantity). Considerable knowledge of the materials, methods, and equipment used in preparing food on a large scale. Considerable knowledge of health hazards in food preparation and service, and knowledge of necessary precautionary measures. Knowledge of food values and menu planning. Ability to train personnel in the care and use of equipment and in standard practices and methods used in largescale food service. Knowledge of safety and security precautions appropriate to work performed.

Job Duties:
- Has a perfect attendance record; arrives prepared to begin work at scheduled starting time daily.
- When absent or tardy, calls the manager or supervisor before the shift begins as outlined in the Dining Services policy.
- Does not have excessive absenteeism per Dining Services policy.
- Employee always wears a clean, neat uniform with a name tag and skid resistant shoes. (Daily; ZERO EXCEPTIONS)
- Exceeds grooming standards as defined in Dining Services policy daily.
- Tastes products to verify the quality of each item served for each meal period daily.
- Guarantees that all food is handled and served per HAACP and guidelines. (ZERO EXCEPTIONS)
- Plans and verifies the use of leftovers correctly (within 24 hours of original preparation); guarantees that the product is served in such a way that it is perceived as a new dish.
- Monitors and assures the quality of items on the serving line throughout the meal service. This includes each item prepared daily. (ZERO EXCEPTIONS)
- Follows all HAACP guidelines as they relate to specific job responsibilities (ZERO EXCEPTIONS)
- It is highly visible in the dining room and/or kitchen based on the MOD assignment.
- Guarantees that Food Service Workers have all tools and products necessary to complete their jobs.
- Holds daily production meetings with cooks and servers to ensure food quality and consistency in portioning.
- Effectively trains new whole and parttime employees; retrain employees as necessary.
- Ensures that food is portioned according to recipe instructions or unit manager.
- Keeps a running list of all routine cleaning/maintenance chores and engages staff in these activities if slowdowns occur in any specific work area.
- Performs additional work without being instructed to do so.
- Guarantees that staff produces high-quality work with exceptional efficiency at each meal daily.
- Is effective and friendly in communication with team members and customers; is always positive and enthusiastic.
- Anticipates, takes ownership, and satisfies customers, fellow team members, and management needs and concerns.
- Displays a positive demeanor with staff and customers alike each day without exception.
- Exercises discretion in sharing Dining Services information with others. Does not talk negatively about Dining Services or employees.
