Scope of the Job
At Cecconi's, the Kitchen Manager, is an organized leader that supports Culinary administrative functions by ensuring all tasks involved in successfully operating the Cecconi's Kitchen are efficiently executed under the guidance of the Executive Chef and Executive Sous Chef. As the Kitchen Manager, your duties will include inventory management, employee performance management, coordinating tasks, recruitment, payroll, kitchen safety, scheduling, disciplinary actions, maintaining SOP's and food compendiums.
A successful Kitchen Manager is highly organized, a strong communicator, efficient planner and knowledgeable of the systems. You will support and organize the activities of the culinary department to ensure the restaurant is meeting professional, regulatory standards and company standards.
Key Responsibilities
- Lead by example and alongside the Culinary Management Team to deliver effective and efficient dining experiences by supporting the back of house (BOH) operation, staffing, food production, accommodating special requests, dietary restrictions and following allergy procedures.
- Assist with the restaurant culinary administrative operations including but not limited to recruitment, on-boarding, training, payroll, inventory, health and safety and supporting operational strategies that maximize productivity.
- Adheres to health and safety policy (I.e. IIPP, worker's comp procedures, and allergy procedures) is always followed as well as implement, monitor and enforce compliance with all Company policies, procedures, and standards and local, state, and federal law as applicable.
- Complete line checks to monitor all refrigeration temperatures, rotation and dating of all foods, proper food prep, food freshness and taste as well as the readiness of specials for service.
- Coordinate ordering of all items with the purchasing department on a daily basis.
- Instill teamwork and synergy exists between the front and back of house staff through proper communication and delegate tasks and staff tasks to ensure smooth service and kitchen operations.
- Partner with culinary management team to develop menus, food preparation, food costs, quality food service and product are delivered.
- Performs other duties as assigned by supervisor/manager.
Experience Required
- Minimum of 3 years' experience working in a similar role; or a Bachelors/Associate degree with 1 year of Culinary Supervisory experience preferred.
- Experienced managing labor, purchasing, vendors and quality control.
- Must encompass Food Serve Safe certification and have experience with local sanitation regulations.
- Well-versed and timely email etiquette as well as written and verbal communication.
- Computer and Microsoft Office skills are preferred.
- High school diploma or equivalent trade school certification.
Physical Requirements
- Must be able to seize, grasp, turn and hold objects with hands
- Must be able to work on your feet for at least 10 hours
- Fast paced movements are required to go from one part of the club to others
- Must be able to move, pull, carry or lift of up to 50 pounds on occasion and 35 pounds regularly
- Occasional environmental exposures to cold, heat, and water.
- Occasionally kneel, bend, crouch and climb as required
