About the Job
Deluca’s Little Rock Kitchen Supervisor (lead line cook) is secondarily responsible for and oversees all aspects associated with BOH operations, and reports directly to the Kitchen Manager.
This includes, but is not limited to, the following:
- Responsible for the management of the BOH department as a whole, including BOH standards, quality, and consistency
- Ensures the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations
- Kitchen organization, product rotation, and routine maintenance
- Coordinates and directs all food preparation, from prep through service
- Stays current on restaurant industry trends
- Supervises the BOH staff to ensures they are each performing at their optimum level
- Oversees the BOH staff when the KM isn’t present
- Ensures all BOH staff are operating within the parameters set forth by ownership including menu and prep consistency, identity, and scope
- Maintains standards of food set forth by the General Manger and Ownership
- Perceives employee morale and takes strides to ensure a positive working environment is maintained
- Strives for open communication flow amongst all managerial, supervisorial, and front-line staff
- Encourages staff and remains consistent in demeanor
- Maintains positivity in high stress situations and leads by example
- Works to ensure there is a consolidated effort with FOH managers in relation to the approach in which they deal with staff
- Presents a united front with other managers in relation to any issues/qualms with staff
- Assists in the aspects related to profit and loss for Deluca’s Little Rock as delegated by the KM
- Monitors BOH ordering and ensures optimum pars and inventory levels are maintained
- Makes scheduling recommendations to the KM to ensure labor cost remains at a reasonable level
- Maintains food quality to ensure standards are met in accordance with Deluca’s recipes and specifications
- Constantly and consistently looks for ways to ensure our food quality remains at the highest level
- Communicates all issues or perceived issues to the KM in order to have a united front concerning corrective measures
- Assists in aspects associated with the training of new departmental hires and new hire paperwork
- Secondarily responsible for gaging new hire progress and determining when training has been completed
- Monitors employee performance in a given shift
