Assure a high standard of appearance, hospitality and service in personnel and cleanliness of dining room. Ensures timeliness of food service. Accurately and efficiently cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot/cold menu item plates.
Line Cooks will
- Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
- Assume 100% responsibility for quality of products served.
- Know and comply consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
- Stock and maintains sufficient levels of food products at line stations to assure a smooth service period.
- Portion food products prior to cooking according to standard portion sizes and recipe specifications.
- Maintain a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté' burners, convection oven, flat top range and refrigeration equipment.
- Prepare item for broiling, grilling, frying, sauteing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
- Follow proper plate presentation and garnish set up for all dishes.
- Handle, store and rotate all products properly.
- Assists in food prep assignments during off-peak periods as needed.
- Close the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
- Plan and prepare the employee meals as requested.
- Perform other related duties as assigned by the Executive Chef or Sous Chef.
Qualifications
- Excellent communication skills (verbally interacts with management, servers and team members)
- Knowledge of formal food service procedures.
- Ability to follow printed recipes and plate specification
- Adhere to grooming and appearance standards consistently
- Knowledge of workplace safety procedures.
- Ability to manage multiple priorities
Physical Demands and Work Environment
- Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend stretch, and twist or reach.
- Able to lift, pull or lift 50lbs, stand/walk 8-12 hours
- Continuous repetitive motions.
- Work in hot, humid and noisy environment.
Job Overview and Requirement
- Must be 18 years of age or older
- Job Hours: Full-Time (Weekends, and Evenings required)
- Required Education: Culinary Degree Preferred
- Required Experience: At least 3 to 5 years of experience in a similar capacity
- Must be available to work flexible shifts including nights, weekends, and holidays
