Hotel Bardo Savannah is seeking a highly skilled and creative Pastry Chef to lead our team. The ideal candidate will have a passion for baking and dessert creation, a keen eye for detail, and a commitment to excellence. As the Pastry Chef, you will be responsible for overseeing all aspects of our pastry department, ensuring the highest quality of desserts, pastries, and baked goods for our guests.
Responsibilities:- Oversee daily pastry production, ensuring consistency, quality, and presentation of all baked goods and desserts.
- Manage inventory, ordering, and cost control of pastry ingredients and supplies.
- Recruit, train, and mentor pastry team members, fostering a vibrant and collaborative work environment.
- Schedule and supervise pastry staff, ensuring proper coverage and adherence to standards.
- Implement and maintain food safety and sanitation standards in accordance with health regulations.
- Conduct regular quality checks on all pastry products, ensuring they meet resort and brand standards.
- Collaborate with culinary leadership and the banquets and events teams to create custom desserts for special occasions and events.
- Develop seasonal and holiday-themed desserts to surprise and delight guests.
- Minimum of 5 years of experience as a pastry chef in a hotel, fine dining restaurant, or similar establishment.
- Proven record of leading and managing a pastry team.
- Exceptional baking and pastry skills with a strong understanding of ingredients and techniques.
- Excellent organizational and time management skills.
- Ability to work under pressure and meet deadlines.
- Knowledge of food safety and sanitation regulations.
- Meticulous with a commitment to excellence.
- Strong communication and interpersonal skills
- Flexible and adaptable to changing priorities.
- Temperature generally is moderate and controlled by hotel environmental systems; however, must be able to work in extreme temperatures like freezers (-10°F) and kitchens (+110°F), possibly for one hour or more.
- Ability to physically handle knives, pots, lift and carry same from shelves and otherwise transport up to 50 pounds to every area of the kitchen or storeroom
- Ability to physically self-demonstrate culinary techniques, i.e., cutting, cooking and baking principles, plate presentation, safety and sanitation practices. Must be able to push and pull carts and equipment weighing up to 200 lbs. occasionally.
- Must be able to bend, stoop, squat and stretch to fulfill cleaning tasks occasionally
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
