Title: Server Assistant
Reports to: Manager
Summary of Position:
As part of the Merriman’s team, the server assistant is responsible for assisting the server with guests and service within their perspective section in all aspects of service. This includes initial greet, water service, bread service, upkeep, clearing plates. You are expected to enhance the guest experience and interact with the guests.
Duties and Responsibilities:
- Priorities: 1. WATER 2. BREAD 3. RESET TABLES
- Assist servers with ongoing table maintenance, keep table current.
- Pull finished meal plates and crumb eating areas after plates are removed.
- Maintain dining area organization and cleanliness during shift.
- Polish and stock glassware for service as it comes from dish pit unless there is a stocker on duty.
- Offer “good-bye” and “Mahalo” to departing quests using their names if known.
- Smile, make eye contact, and show that you are happy to be representing Merriman’s and being part of the team.
- Complete opening duties, check schedule and floor plans to see sections and servers that you will be assisting.
- Team work is a must, keep lines of communication open at all times.
- Be fully dressed and attend pre-service meeting. (Punctuality is a must.)
- Tables should be reset no more than 90 seconds after the guest leaves.
- Bread the table after server secures a food order, with the exception of children dining; it will be okay to start sooner.
- Pull amuse bouche when guests are done. Do not leave it past the first course.
- Take inventory of dining room to consolidate steps.
- Never enter dining room empty handed practice the “no empty hands approach”.
- Clear tables completely, keep tables current clean and organized through each course. When guests are finished with entrees be sure that the table is completely clean, except for water glasses, cocktail glasses and the candle. Crumb the table, if needed.
- Stay in contact with greeter, to help with seating and setting for large parties, check to see if high chairs or booster are needed and bring them out.
- Pre-buss, always clear the complete table; wait until all of the guests have completed their current course. Clear each individual completely. If needed make a second trip, if you can’t get all the dishes. The only exception will be if a quest would like you to remove a plate or they start stacking plates.
- Keep floors and chairs free of debris.
- Present the dessert menu when needed.
- Refill water throughout, keep water full till the very end of service.
- Iced tea, replace with fresh glass after ¾ of tea is consumed.
- Assist servers with coffee delivery.
- Refold all dinner napkins when a guest steps away from the table.
- Guest should always be given the right of way in the restaurant.
- Advise server when coffee is delivered to ensure posting on guest check.
- Create an atmosphere, enlightened hospitality, always professional, friendly & consistent in style to each & every table.
- Check out with shift manager.
