Position Overview: Mare Island Brewing Co.—a successful, customer service driven, rapidly-growing craft brewery—seeks a seasoned, experienced, worthy soul to join our team in the management position of Sous Chef. This position will work with—and report directly to—the Executive Chef, and will be responsible for managing culinary operations for the given location.
Our First Street Taphouse in Benicia just had its one year anniversary. Located in scenic downtown Benicia, our newest taproom features a creative seasonal menu, 20 taps, and both indoor and outdoor dining options. We offer full table service, unlike our other two counter service locations. Our menu offers Bar Bites, Small Plates, and Large Plates, ideal for sharing. We have also added a weekend Brunch menu with great flavor-forward options.
Our separate 8000 square foot Coal Shed Brewery on the Mare Island waterfront serves as our beer production facility, private event space and the location of our food truck. The Coal Shed has been open for two years and has developed into a very successful event space in the last 18 months with continued catering needs and inquires. The Food Truck has been open since August of 2020 and has proven to be a huge success and a great addition to our culinary program.
We have a very solid and committed chef team consisting of our Executive Chef and Executive Sous Chef. The support staff is committed and you would have the freedom and ability to bring in new hires to fill out the rest of the needs in the kitchen.
We are looking for experience, ability, commitment, and a desire to organize and execute a solid, multi-faceted food program.
Ideal candidate will:
- Be committed to—and have a proven track record in—their career in food production. It has to be your calling.
- Have command of all aspects of managing and execution of kitchen operations, including menu development, seasonal specials, catering menu and execution, to-go/box lunch menu and execution, food costing measures (inventory control, waste/spoilage, menu costing), vendor relations and ordering, spreadsheets, hiring/firing, scheduling, staff development, maintenance/cleaning scheduling, dealing with emergencies, and ideally, physical space build outs. Bring your expertise and help design the program.
- Have excellent written, oral, and numbers communication. Critical.
- Believe in the power of craft beer. Brew knowledge is a plus, but not required—we can teach that. But you must believe.
- Have an unshakeable positive nature, a sense of humor, honesty, reliability, and good common sense.
