About the Job
A Kitchen Manager for Castle Group impacts every Guest experience within our restaurant, bar and banquets. We always deliver an experience that will exceed our Guests' food, beverage, and culinary expectations.
- This individual will report directly to the General Manager of the restaurant, as well as the Property Manager.
- Work a minimum of 5 rotating shifts during a week, that will vary in arrival and departure times and will include weekend work. A minimum of 50 hours per week. Shifts will benefit the restaurant needs first, and then the employee.
Essential Duties & Responsibilities
Includes the following. Other duties may be assigned.
- Consistent maintenance of/and refinement of Steps of Royal Service standards.
- Be a working manager. The Kitchen Manager will be scheduled into a “cooking” role during peak times.
- Develop and Lead the Kitchen Staff in successful execution of core menu and specials.
- Maintain appropriate staffing levels for sales expectations and seasonal changes.
- Assure staff have the tools and supplies to do their job.
- Place weekly orders for products necessary to be successful.
- Maintain food and labor cost consist with budget and sales expectations, and with approval and guidance of the General Manager of the Restaurant
- Performs EOM inventories during closed hours, and present to General Manager for approval and submission
- Assures outlet pars of all china, glass, and silver are at identified levels daily.
- Attends daily and weekly food and beverage meetings.
- Participates in planning, organizing, and controlling cost for events on property.
- Assures Cleanliness of all F&B areas (Kitchen/Storerooms/etc.)
- Resolve guest complaints, ensuring guest satisfaction.
- Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
- Maintain complete knowledge of menu items, and train kitchen staff to execute.
- Maintain complete knowledge of local, state and federal food safety standards.
- Ensure that assigned staff has reported to work, document any late or absent employees.
- Coordinate breaks for assigned staff.
- Assign work and side duties to staff in accordance with departmental procedures.
- Communicate additions or changes to the assignments as they arise throughout the shift.
- Conduct pre-shift meeting with staff and review all information pertinent to the day's business. Inspect grooming and attire of staff; rectify any deficiencies.
- Complete all paperwork and closing duties in accordance with departmental standards.
Experience/Knowledge/Skills:
- 1 year in restaurant or comparable field
- High School diploma/ GED
- Knowledge of best practices for training kitchen staff and implementing kitchen procedures
- High level of creativity, profesionalism and reliability
- Comfortable working with a team in a fast-paced kitchen environment
- Excellent verbal communication and organization skills
Language requirements:
Fluent in English as a primary language.
Travel and availability requirements:
May be required to travel for training sessions off-site on an ad-hoc basis. May be occasionally required to cover for front desk staff at other communities within a reasonable commuting distance when needed.
Ability to work extended hours and weekends based on project requirement. Ability to respond to emergencies and callouts in a timely manner.
Physical Requirements:
Ability to lift up to 40 lbs.; work in an upright standing or sitting position for long periods of time, may fluctuate. May handle, finger, grasp and lift objects and packages. Reach with hands and arms, communicate, receive and exchange ideas and information. Ability to quickly and easily navigate the property/building as required to meet the job functions; complete all required forms.

Working Conditions:
The majority of work will be completed indoors in a temperature controlled environment with little to moderate noise levels.
