About the Job
Boar's Head Resort is seeking to hire a qualified Sous Chef for AM shift at the Mill Room restaurant. This position will assist all Chefs in culinary operations. Undertake the physical and administrative responsibilities in the relief or assistance of any Chefs as needed.
ESSENTIAL JOB FUNCTIONS
- Maintain sensitivity to business levels by logging, forecasting and reacting accordingly.
- Be available at a moment's notice and assist wherever needed or directed by supervisor.
- Continually raise the bar on quality and consistency of products delivered.
- Coach, supervise and assist all Culinary and Steward Associates in their daily work and assignments.
- Maintain, supervise and observe all sanitation procedures and food rotation.
- Maintain Food, Labor and Operating costs as budgeted.
- Assist in the revision of menu content and recipes seasonally and according to sales, members and guest feedback.
- Follow the associate hand book and reinforce Boar's Head rules of conduct and policies.
- Oversee weekly associate schedule consistent with staffing guide and business volume.
- Conduct food inventory and ordering as needed.
- Oversee the maintenance and cleanliness of the Kitchen and loading dock area.
- Create and maintain a safe working environment at all times.
- Provide proper sanitation and safety training to all Culinary and Stewards Associates.
- Work holidays as needed or any other designated time as requested by supervisor.
- Work in any other culinary outlet when needed.
- Maintain thorough knowledge of all Boar's Head food products, recipes making, preparation and presentation.
- Report any unusual or suspicious activities in the work environment.
- Report all work related accident, misconduct or possible harassment.
- Maintain an open line of communication with fellow Chefs and Associates.
- Maintain a high level of confidentiality on sensitive subject matters as requested by management.
- Report to work on time and lead by example.
- Promote teamwork and organization among all associates.
- Clean and maintain all equipment in proper working condition and report all equipment in need of repair to Engineering.
