About the Job
We are looking for a leader and someone passionate about the culinary arts to join our culinary team as a Sous Chef. This individual must have experience working in a mid to high-volume professional kitchen in the areas of restaurants and banquets in a full-service hotel. A graduate in culinary arts is a plus.
This individual must be creative, motivated, and a passionate hands-on leader in the kitchen! Successful candidates for this role will have a track record of working with creative menus that reflect seasonal availability based on the concept of the restaurant, respond professionally and courteously to guests and team, and enjoy being a teacher of the culinary arts supporting their team both personally and professionally.
The Sous Chef will assist with planning and execution of the daily production, preparation, and presentation of all food for the hotel in a safe, sanitary work environment that conforms to all standards and regulations and achieves profitable competitive quality products. Your role:
- You will attract, retain, and motivate the best culinary talent.
- You will primarily be responsible for the 3-meal restaurant and assist in another kitchen as needed.
- Partner with the Executive Chef and Sr. Sous Chef in restaurant menu creations.
- You will train
- You will act in the absence of the Sr. Sous chef to complete the daily ordering using the current par levels for all outlets, employee cafeteria, and banquets.
- You will conduct daily walk-throughs of the kitchen, and make recommendations for corrections, repairs, cleanliness concerns, and improvements if needed.
- You will attend weekly F&B meetings, BEO meetings, leadership meetings, and quarterly safety meetings, and represent the culinary team.
- You will have a thorough knowledge of food allergens and handle any guest with food allergies with a high sense of urgency.
- You will collaborate with the culinary team to ensure prep sheets are updated and are effectively used daily.
- You will guide the nightly cleaning of all kitchen areas and follow up with the pm stewarding crew to ensure the dish area is clean and organized for the following day's service.
- At least 3-4 years of overall kitchen experience in a full-service hotel is a plus.
- Experience in both Restaurant and banquet kitchen is required.
- Previous supervisory experience is a plus.
- Ability and willingness to work in all stations in the kitchen.
- The next level of growth could be Sous Chef
- Knowledge of Spanish is a plus.
Please be advised, that we are a large full-service hotel, and as such this position requires extended periods on your feet with frequent long walks around the internal areas of the hotel along with considerable physical activity on a continuous basis, up to and including entire shifts.
