About the Role
A Specialty Cook Pastry will accurately and efficiently prepare, portion, cook from scratch, and present a variety of hot and/or cold food items using specialized techniques and skills for various meal periods in various outlets/preparation locations according to the outlet/preparation location recipes and SOPs and within current health and safety standards set forth by Ocean Casino, local, state, and federal regulatory agencies.
Position Responsibilities
· Prepares and cooks specialized bakery and specialized pastry items from scratch based on recipes, SOPs, and verbal instruction by the pastry chef, and pastry sous chef.
· Converting and scaling recipes up or down from original recipe specifications.
· Converting recipes from grams to ounces.
· May prepare and cook food in an ala carte style of service, banquet/catering style of service, and buffet style of service.
· Provides the highest quality of food and service to customers on Ocean Casino property and/or at offsite events representing Ocean Casino at all times.
· Reads food orders and/or receives verbal instructions on food required by guests and prepares, cooks, and presents food according to instructions, recipes, and SOPs.
· Proficient in baking, production, FIFO, frying, tempering chocolate, piping/cake writing, cake decorating, making caramel, various dough production. Proficient in using standard kitchen equipment including but not limited to open flame burners, fryers, convection ovens, deck ovens, rotating ovens, sheeters, chocolate/airbrush sprayers, tempering machines, various scales, various mixers, blenders, robot coupes, and emersion blenders.
· Comprehensive understanding of how to gauge proper cooking temperatures per recipes, SOPs, local, state, and federal regulatory agencies, or verbal instruction by pastry chef or pastry sous chef.
· Comprehensive understanding of how to gauge proper cooking temperatures for all basic and specialized applications produced within but not limited to the bakeshop.
· Can proficiently perform the position responsibilities of a cook 1, cook 2 and cook 3.
· Can work independently with no supervision for various periods of time adhering to all position responsibilities listed.
· Assumes leadership role in the kitchen when the pastry chef or pastry sous chef is not present ensuring production lists are completed according to recipes and SOPs and ensures quality standards are met by cook 1, cook 2, and cook 3 cook positions.
· Keep all workstations clean, sanitary, and organized at all times.
· May perform other duties and responsibilities as assigned.
· May assign duties and responsibilities to cook 1, cook 2, and cook 3 as assigned by pastry chef and pastry sous chef.
Essential Functions
· Exposure to casino related environmental factors including but not limited to secondhand smoke, excessive noise, and stress related to servicing customers in a high pressure and fast paced environment
· Continuous standing, walking for long periods of time.
· Pushing and/or pulling heavy carts, lifting products, and placing into proper storage areas.
· Ability to work in hot and/or cold areas within the same shift.
· Lift perishable and non-perishable items up to 50 pounds.
· Repetitive lifting, bending, reaching.
Requirements
Has graduated a Culinary Program with a Certificate/Degree minimum 3 years’ experience or has 7 years’ experience in a high-volume production bakery/kitchen with experience in specialized pastry/baking applications.
· Portfolio of experience preferred.
· The ability to communicate, read, and comprehend the English language.
· Successfully pass with a score of 80% a practical cooking test and a written cooking test.
· Must follow all Ocean Casino policies including wearing black non-slip shoes, an Ocean hat, plain black hat, or disposable toque, or sailors cap, kitchen uniform, and name tag.
